You are going to love these little chai pumpkin pie balls because they are filled with healthy ingredients like pumpkin, oats, chia seeds and organic black tea.  The best part: they taste like you are eating a dessert. In addition, these little bite sized energy bites are great solution for packed lunches, after school snacks, Halloween parties or whenever you need a little energy to power your busy day.

Try these no bake pumpkin balls to give you an energy boost. They are packed with protein from the almond butter and chia seeds. Our caffeinated Organic Black tea will help you stay awake and focus. This no bake recipe uses ground organic dried black tea leaves just like in our recipe for Earl Grey Orange Cookies. You can use a mortar and pestle, spice grinder or food processor to grind the tea leaves and spices into a finer powder.

 No Bake Pumpkin Balls

No Bake Pumpkin Balls
Makes ~ 24 balls
Prep Time: 15-20 minutes
 
 Ingredients:
  • 3 tea bags OR 3 loose leaf tablespoons dry Pumpkin Pie Chai Organic Black Tea
  • 1 cup creamy Almond butter (or peanut butter)
  • ½ cup canned plain pumpkin puree
  • ¼ cup plus 2 tablespoons maple syrup (Adjust to your desired sweetness level and can exchange with honey if you do not need to keep vegan)
  • 1 teaspoon vanilla extract
  • 5 cups dry oatmeal (rolled oats or instant oats - both work)
  • ¼ cup whole chia seeds
  • 1/3 cup pecans chopped or other nuts of choice
  • 2 teaspoons dried ground cinnamon
  • 1 teaspoon dried ground nutmeg
  • ¼ teaspoon cloves
  • 1/3 cup vegan dark chocolate chips or chopped chocolate bar (optional – can exchange with semisweet chocolate chips if you do not need to keep it vegan)

Directions:

Remove the tea from the non-GMO pyramidal tea bags or measure out 3 tablespoons of loose-leaf tea. In either a food processer, spice grinder or with mortar and pestle, grind Pumpkin Pie Chai Organic Black Tea until it is a fine powder.

In a large bowl add ground Pumpkin Pie Chai Organic Black tea, almond butter or peanut butter, pumpkin puree, vanilla extract, maple syrup, dry oats, chia seeds, pecans, cinnamon, nutmeg, cloves, and chocolate chips (if desired). Mix well.

Roll into balls about 1.5 inches or use a cookie scoop. This recipe makes about 24 no bake pumpkin balls.

Recipe Notes:

These little protein energy bites can be stored in a covered container in the refrigerator for 2 weeks or stored in the freezer for 2 months.

If your protein balls have been frozen, just leave out 10-15 minutes at room temperature to make them easier to eat.

The ratio to dry to wet ingredients is important so that the balls roll easily. If the mixture is too wet, add a little bit more rolled oatmeal. On the other hand, if the mixture is too dry, add a little more maple syrup or canned pumpkin just to get it to stick together.

Pumpkin Pie Chai No Bake Balls

Don’t feel like rolling into balls? No worries. Grab yourself an 8 x 8 pan and line with parchment paper or waxed paper. Dump the pumpkin pie chai no bake oat mixture into the pan and press flat so that it is even. Let it refrigerate for a couple of hours and then cut into small squares to serve.
