This organic decaffeinated Sencha tea uses the superior CO2 process which does not use chemicals or detract from the tea's health benefits. This process for removing the caffeine from the tea involves soaking the tea leaves briefly in pure water and then gently flushed it with CO2. The CO2 binds to the caffeine molecules and extracts them from the tea leaving behind the natural proteins that give tea its flavor. This process also leaves many of the polyphenols and antioxidants intact.
