Green tea is derived from the leaves of the Camellia sinensis plant like other teas, however the leaves are not processed the same. Green tea leaves are picked then immediately heated and dried to stop the oxidation and fermentation process from occurring which would turn the leaves brown. 
This is different processing method then other tea varieties such as black tea which are allowed to ferment longer.
